Purple Garlic
Ajo Morado

This variety is usually harvested at the end of October. This type of garlic is the most sought after in today's markets. It has a purple appearance and a mild flavour. It has an intermediate shelf life.

White Garlic
Ajo Blanco

This variety of garlic is usually harvested in mid-November. Its bulb is white as is the skin of the cloves. It has a longer shelf life.

Red Garlic
Ajo Colorado

This variety is usually harvested in early December. It has a deep red protective skin. It has a stronger flavour than other varieties and can be stored for longer.

Onion

This variety of onion is the most commonly used as a condiment or ingredient, as it has a sweet and intense flavour. This variety of onion is generally harvested at the beginning of February, and due to its conditions it can be preserved for several months.
